Hummus:
- 1 sweet potato (steamed)
- 1/4 cup lime juice
- 1 can chickpeas, rinsed, drained
- 1/4 cup tahini
- 1/4 cup coconut oil, melted
- 2 1/2 tsp curry powder
- 1 tsp cumin
- 1 1/2 tsp ginger
- 2 Tsps garlic, minced
- 1/4 tsp red pepper flakes
- Salt/Pepper as needed
Toppings:
- 1/2 cup toasted cashews, coarsely chopped
- 1 sprig cilantro
Instructions
- Throw everything in a food processor and top with toasted cashews and cilantro
