Salad:
- 1 bag arugula
- 1 large peach, sliced
- 1/2 cup toasted pecans, chopped
- 1/2 cup feta cheese or vegan feta
- 1/2 cup red onion, thinly sliced
- 1 avocado, cubed
Creamy Balsamic Dressing:
- 2 tsp balsamic glaze
- 2 tbsp balsamic vinegar
- 1/3 cup sour cream or vegan sour cream
- 1/3 cup olive oil
- 1 tbsp dijon mustard
- Salt + Pepper
Instructions
- Toast your pecans and throw in a bowl with the arugula, red onion, feta and peaches.
- Dressing: In a small bowl combing all the ingredients. Pour over the salad, enjoy!
