Base:
- 2 cups almond flour
- 1/2 cup vegan butter
- 1 teaspoon vanilla
- 1/4 tsp salt
- 1/4 cup coconut sugar
- 1/2 tsp cinnamon
Apple Filling:
- 3 large apples, peeled and chopped
- 1 tbs corn starch
- 2 Tablespoons coconut sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup water
Topping:
- 1 cup almond flour
- 1/2 cup coconut sugar
- 1 tsp cinnamon
- 1/4 cup vegan butter – melted or room temp to cut in.
Instructions
- Preheat oven to 350° and line a 8×8 pan with parchment paper.
- In a medium bowl, combine almond flour, vegan butter or (room temp) coconut oil, coconut sugar, cinnamon, salt, and vanilla. Mix until well combined. Press into the bottom of the prepared pan and bake for 11-13 minutes, or until sides are slightly brown. Let cool while preparing the next layer.
- In a large pan add all the ingredients with the apples, cook until softened (5-7 minutes). Combine the corn starch and water and remove all of the clumps. Add to the starch combo to the pan and continue to stir. The sauce should thicken. Remove from heat and set aside. Layer the apple on top of the cooked cooled crust.
- Combine the topping ingredients in a bowl by hand. Sprinkle on top of the apple layer and bake for an addition 10-15 minutes until golden brown.
- Remove from heat, allow to cool, slice and enjoy!
