- 8 tbsp vegan butter
- 1 1/2 bags vegan marshmallows
- 1/2 cup creamy peanut butter, NOT natural
- 1/2 teaspoon pure vanilla extract
- 6 cups rice cereal
- flaky sea salt
Instructions
- Grease an 8×8 or 9×9 square baking dish.
- In a large (preferably non-stick) saucepan over medium-low heat melt butter until it foams and browns. 3 to 4 mins.
- Add 1 bag of marshmallows, stirring frequently. Once melted with a few solid pieces remaining. Immediately add peanut butter and vanilla (optional), stirring until combined. Remove from heat and stir in the Rice Krispies. Fold in the remaining 1/2 bag of marshmallows. (if you don’t care to have some solid-ish marshmallows you can just cook them all together, but it makes them softer!)
- Scoop the mixture into the prepared baking dish and gently press into an even layer. Sprinkle the top of the treats with flaky sea salt and allow to cool to room temperature before slicing and serving.
