- 1 cup vegan butter
- 3/4 cup dark brown sugar, packed
- 3/4 cup granulated sugar
- 2 tbsp ground flax
- 6 tbsp water
- 1 teaspoon vanilla
- 2 1/2 cups oatmeal
- 2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 1/2 cups stevia sweetened chocolate chips
- 1 3 to 4-ounce dark chocolate bar
- 1 1/2 cups chopped toasted walnuts
Instructions
- Heat oven to 375 degrees.
- Cream together vegan butter and both sugars.
- Stir in vegan flax eggs and vanilla.
- Finely grind oatmeal in a high power blender or food processor.
- Combine the oatmeal, flour, salt, baking powder and soda in a medium bowl, and slowly add it to the wet ingredients. Beat just until combined.
- Grate chocolate bar using a microplane grater and add it, along with chocolate chips and nuts to the batter. Mix just to combine. (if you make overnight, simply store in airtight container in fridge. Let dough come to room temp, about 10 mins before shaping. Color may look darker with micro planed chocolate)
- Drop by heaping tablespoonfuls, 2 inches apart, on a greased cookie sheet. Bake for 8-10 minutes.
Notes
- If dough seems dry, work 1 capful of almond milk into the batter with your hands.
