Lately I’ve been craving fun food hacks as they are great for improving everything from your cooking skills, to storage and just making the best use of your time and money! Something I’ve always been curious about? What you can do with pancake mix! 

 

We all know that you can whip up a batch of pancakes or waffles with it, but did you know that there are a handful of other things that you can do with it? One of them, is making cookies! Whether you have lingering pancake mix or simply hate measuring out multiple dry ingredients, this concept is so fun!

 

By simply whipping up butter and sugar and throwing in a flax egg, you can make a standard cookie out of everyday pancake mix! If you hate beating butter and sugar, you may be able to even just do it by hand!

 

I was honestly shocked that this recipe worked and it was great to know that we are not only limited to pancakes when you buy a ready made mix. They are soft, chewy, and just like your standard chocolate chip cookies!

 

 

 

 


 

What’s fab about these cookies? Everything! They are quick, easy, affordable, need just a flax egg, butter and sugars, are made with just a handful of ingredients, are buttery soft, the perfect way to salvage lingering pancake mix, can easily be made in bulk, require a short chill time, you can cut down the sugar, use stevia sweetened chocolate like I did, and you can add mix up the add ons like nuts and extracts!

Vegan Pancake Mix Chocolate Chip Cookies

Instructions

  1. Preheat oven to 350 degrees and line two baking sheets with parchment paper
  2. In a standing mixer or bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy, 3-4 minutes.
  3. Mix in vegan egg and vanilla until just combined.
  4. With the mixer on low, blend in pancake mix until just combined, taking care not to over-mix. Fold in chocolate chips.
  5. Place bowl in fridge to let cookie dough chill for about 30 minutes.
  6. Scoop about 3 Tbsp cookie dough onto prepared cookie sheets, about two inches apart. Cookies will spread a bit.
  7. Bake for 10-12 minutes, until cookies are just turning golden around edges. Let cool in pan for a couple minutes before moving to wire racks to cool completely.
