- 3–4 small pears (not ripe)
- 1 cups water
- 2 cup red wine
- 1 cup sugar
- 1 lemon, halved
- 1 cinnamon stick
- 4 cloves
- 1 vanilla bean
- Garnish: Coconut whip and toasted pistachios
Instructions
- Peel and core the pears from the bottom, leaving the stems in place.
- In a small pot, add the water, wine, sugar, lemon, cinnamon sticks, cloves and vanilla bean. Place the pears in the poaching liquid and cook until just before tenderness, about 45 minutes. Continue to baste the pears as you cook them and rotate. Allow pears to cool completely in the liquid.
- Remove the pears and reduce the liquid over medium heat. (5 mins) Remove the cinnamon stick, vanilla, and cloves.
- To place smear the sauce on the bottom and serve with coconut whip and toasted pistachios.
