- 2 1/2 tbsps vegan butter, cold
- 3 Tbsp. brown sugar
- 1 tbsp ground flax combine w/3 tbsp water
- 1/4 tsp vanilla extract
- 1/4 cup white flour
- 1/4 cup cake flour
- 1/4 tsp cornstarch
- 1/8 tsp baking soda
- 1/8 tsp salt
- 1/3 cup stevia sweetened chocolate chips
- 1/4 cup chopped nuts
- 2 vegan caramels, chopped
- Flake salt, garnish
Instructions
- Combine the flax egg and water, set aside.
- Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Set aside.
- Beat the butter and sugar until combined and smooth.
- Add 1 1/2 tbsps of the flax egg mixture and vanilla extract to the bowl, combine.
- To a bowl combine all the dried ingredients. Gradually add it to the bowl mixing on low. The texture will be crumbly, but don’t worry.
- Add your chocolate chips, chopped caramels, pecans, and combine with your hands. Add additional chips on top.
- Form a large ball. You want the cookie to have height. Bake for 13-15 mins until golden brown. Garnish with flake salt.
- Allow the cookie to rest for about 10 minutes, then enjoy!
