Salad:
- 1/2 cup feta or vegan feta
- 4 cups seedless watermelon, cut into cubes
- 1 cup seedless cucumber, chopped
- 1/2 cup ed onion, sliced think
- 8–10 coarsely chopped mint leaves
- Salt/Pepper as needed
Dressing:
- 2 tbsp cup extra-virgin olive oil
- 1 lime, juiced
- 2 tbsp apple cider vinegar
- 1 1/2 tbsp honey or agave
Instructions
- In a large bowl, combine the cucumber, watermelon and onion.
- In a small bowl combine the dressing ingredients. Pour over the salad.
- Top with feta cheese and additional mint. Serve chilled.
