- 1 tbsp olive oil
- 1 cup long grain rice
- 1/2 white or yellow onion, diced
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1 3/4 cup vegetable broth
- 2 1/2 tbsp tomato paste
- 1 jalapeno, diced
Instructions
- In a large heavy saucepan, heat the oil on medium-high heat.
- Add the garlic cook for 2 minutes until golden. Now add the diced onion, cook for 4 minutes until golden.
- Add the tomato paste, broth, and salt. Mix well until paste is combined.
- Add the diced jalapeno.
- Cover, reduce the heat to low, and simmer until rice is ready, about 12 minutes. Remove from heat and allow to cool for 10 minutes.
- Fluff with a fork and serve immediately. Garnish with limes and cilantro.
