Instructions

  1. In a large heavy saucepan, heat the oil on medium-high heat.
  2. Add the garlic cook for 2 minutes until golden. Now add the diced onion, cook for 4 minutes until golden.
  3. Add the tomato paste, broth, and salt. Mix well until paste is combined.
  4. Add the diced jalapeno.
  5. Cover, reduce the heat to low, and simmer until rice is ready, about 12 minutes. Remove from heat and allow to cool for 10 minutes.
  6. Fluff with a fork and serve immediately. Garnish with limes and cilantro.
