Kale Guacamole

Ingredients

Scale
  • 4 large kale leaves – I recommend curly “Dinosaur” kale, stems removed
  • 4 ripe avocados
  • 1/2 cup diced red onion
  • 1/4 cup diced cilantro, more for garnish
  • Zest of 1 lime
  • 2 limes, juice only 
  • 1 teaspoon sea salt
  • 1 jalapeño, diced 

Instructions

  1. Thinly slice the kale. Take a little olive oil in your hands and massage the kale. If you’re not a fan of kale I recommend this!
  2. Place all ingredients in a large bowl. Mash and fold until well combined. Add additional salt, jalapeño or lime juice as desired. 
  3. More of a nutrient boost?! Throw in some chia or hemp seeds!!

Notes

If you want to really mask the kale, you can throw in a food processor for very fine cuts
If you’re craving more flavor you can throw in 1/2 tsp of cumin
