Quick and easy Texas Caviar!
Ingredients

- 2 avocados, chopped
- 1/2 can black beans, drained and rinsed
- 1/2 can corn, drained
- 1 cup red onion, diced
- 3 roma tomatoes, chopped
- 1/4 cup cilantro, chopped
- 1 lime, juice of, freshly squeezed
- 1 tsp coarse salt
- 1 tbsp olive oil
- 1/2 cup apple cider vinegar
- 1/2 cup pickled jalapeños, chopped (or 1/2 jalapeño pepper, chopped)
- 1 can black eyed peas, drained, rinsed
- 1 small red bell pepper
- 1 small green bell pepper
- 1/2 tsp chile powder (optional)
Instructions
- Mix together all of the above ingredients, chill in the fridge for a few hours, then serve with tortilla chips! All of the ingredients can be modified to fit your personal preference! I recommend the lime juice as it helps to prevent the avocados from browning.
