- 1 tbsp olive oil
- 1 large clove garlic, minced
- 1 (6 oz) can tomato paste
- 1 1/2 cups water
- 1 tsp Italian seasoning
- 1/2 tsp dried basil (optional)
- 1/2 cup cashews, soaked
- 1/4 cup almond milk
- Salt and pepper, to taste
- 1 Package Gardein Seven Grain Tenders
Instructions
- Preheat oven to 450 degrees.
- Soak cashews in boiling water for 10 minutes. Place in a high power blender with the almond milk and blend until smooth.
- Heat the olive oil over medium heat in a medium saucepan. Add the garlic and cook until just softened — just a minute or two.
- Add the tomato paste, water, Italian seasoning, salt, pepper and sugar to the pan. Bring to a boil over medium heat, stirring occasionally.
- Reduce heat, cover and simmer for 10 minutes. Turn off the heat and add in the cashew/almond milk mixture. Taste, and adjust seasoning as desired.
- Place Gardein Seven Grain Crispy Tenders on a baking sheet covered in parchment paper. Bake for 10 minutes until crispy.
- Allow to slightly cool and serve with fresh pasta and 10 minute sauce!
