Vegan Buffalo Jackfruit “Egg Rolls”

Ingredients

Scale
  • 1 can jackfruit
  • 4 cups water
  • 1/2 cup buffalo sauce
  • 2/3 cup Follow Your vegan Heart Blue Cheese dressing
  • 4 oz. Follow Your Heart vegan cream cheese, softened/room temp
  • 2 scallions chopped
  • 10 vegan wonton “egg rolls” – Dynasty brand is vegan
  • 2 tbsp chives (garnish)

Instructions

  1. Preheat oven to 350. In a large pan heat 4 cups water to boiling. Add the jackfruit and cook for 10 minutes. Drain, and add oil to the pan and cook for 5-7 mins breaking the jackfruit up with a fork. Add the buffalo sauce, blue cheese dressing, scallions, and cream cheese. Continue to stir and combine over medium heat.
  2. Fill a small bowl with water. Place 2 heaping tablespoons of filling on the front third of each “egg roll” wrapper. Fold the corner up on the end of the side you filled. Fold both sides inward and roll up. Seal the ends of the wrapper with water and place seam-side down on baking sheet. Repeat with remaining wontons and filling.
  3. Bake egg rolls for 12-15 minutes or until golden brown and crispy. Serve with blue cheese sauce.
