Vegan Cucumber Hummus

Ingredients

Scale
  • 2 cans chickpeas
  • 1 cucumber, sliced
  • 1 bunch dill
  • 1/2 cup olive oil
  • 3tbsp lemon juice
  • 2 handfuls spinach
  • 2 cloves garlic, minced
  • 1/4 cup tahini
  • salt/pepper as desired
  • 510 mint leaves

Instructions

  1. Throw everything in a food processor and blend until smooth! Garnish with dill and cucumber and my classic homemade tofu feta. Get the recipe on EDS! There is a link in the post.
