Vegan Dill Pickle Hummus

Ingredients

Scale
  • 2/3 cup chopped pickles, plus more for garnish
  • 2 cans chickpeas, drained, rinsed
  • 1/2 cup tahini
  • 1/2 squeeze lemon
  • 1/4 cup olive oil, plus more for serving
  • 1/4 cup pickle juice (from jar)
  • 2 cloves garlic
  • 1/4 tsp crushed red pepper flakes
  • Salt/Pepper as needed
  • 2 handfuls fresh spinach
  • 5 tbsp. chopped dill, for garnish

Instructions

  1. Place all the ingredients in the bowl of a food processor, blend until smooth. Adjust ingredients as desired. 
  2. Pour into a bowl and drizzle with olive oil. Top with chopped pickles and dill and serve with pita chips and or sliced veggies.
