- 1 large burrito tortilla
- 1–2 slices of faux bacon
- 1/3 cup fresh salsa
- 1 vegan egg or scrambled egg etc
- 2 tbsp chopped cilantro 1/3 cup pickled jalapeños
- 1/2 avocado
- Cilantro, garnish
Instructions
- Lay tortilla flat. Fold in half to create a seam in the tortilla marking the middle. Unfold, and make a small cut to the center of the tortilla.
- Imagine the tortilla is split into 4 equal sections. Add a couple spoonfuls of each ingredient into each section. I love to do avocado, faux bacon, vegan eggs, and fresh salsa. Garnish with chopped cilantro.
- Starting with the bottom left quadrant fold up, then fold over to the right, then down. You can find a tutorial here.
- Add 1 tbsp olive oil to the pan. Add quesadilla and cook for 3 minutes per side until crisp.
- Remove from heat and garnish with additional fresh cilantro. Serve with the optional sour cream and enjoy!
