Vegan Folded Breakfast Quesadilla

 

 

 

 

 

 

 

 

 

 

If there is one thing I’ve come to embrace, it’s food trends. A lot of times they come and go, but there are a few that stick around and really hold up. One of those, is folded quesadillas! I don’t know about you, but I’m all about white tortillas and anything quesadilla inspired. Believe it or not, I even own a quesadilla maker lol, I’ve just never used it. (I think I’ve had it for a few years)

 

While I’ve yet to use the quesadilla maker, there was something about this folded concept that I just had to try. Visually it was stimulating, I liked how the ingredients were placed, and being folded it was honestly easier to eat. If you put vegan nacho cheese on a quesadilla using 2 tortillas, it just wouldn’t hold together. I love this method as it’s just compacted and you tap into all the flavors with each bite. Bonus, each bite is crunchy!

 

If like me you were waiting to jump on the folded quesadilla train, don’t wait… You have to try this concept!

 

So when thinking of the next best folded quesadilla concept, I knew we had to explore a breakfast one! I personally loved even the standard quesadilla version of this concept as it’s so filling and you can make them as veggie packed as you like. I love to do a vegan egg, but you can use a standard egg, avocado, a fun salsa, and faux bacon. The options for fillers are endless leaving you never getting bored with this folded concept. 

 

Don’t like white tortillas?

Use whichever tortillas you like!  Keto, gluten free etc. 

 

 

 

 


 

What’s great about the folded quesadilla? It’s quick, easy, affordable, filling, you can make it as veggie packed as you like, I pack mine with multiple textures and flavor profiles, it’s perfect for any season, great for entertaining, once cooked the tortilla stays firm and doesn’t get soggy, great even for on the go, you can switch up the veggies and even pair it with a dipping sauce if desired!

Vegan Folded Breakfast Quesadilla

Ingredients

Units Scale
  • 1 large burrito tortilla
  • 12 slices of faux bacon
  • 1/3 cup fresh salsa
  • 1 vegan egg or scrambled egg etc
  • 2 tbsp chopped cilantro 1/3 cup pickled jalapeños
  • 1/2 avocado
  • Cilantro, garnish

Instructions

 

  1. Lay tortilla flat. Fold in half to create a seam in the tortilla marking the middle. Unfold, and make a small cut to the center of the tortilla.
  2. Imagine the tortilla is split into 4 equal sections. Add a couple spoonfuls of each ingredient into each section. I love to do avocado, faux bacon, vegan eggs, and fresh salsa. Garnish with chopped cilantro.
  3. Starting with the bottom left quadrant fold up, then fold over to the right, then down. You can find a tutorial here.
  4. Add 1 tbsp olive oil to the pan. Add quesadilla and cook for 3 minutes per side until crisp.
  5. Remove from heat and garnish with additional fresh cilantro. Serve with the optional sour cream and enjoy!
