VEGAN 4 INGREDIENT MANGO PUDDING
Let’s talk pudding!
If there is one thing I love, its an easy pudding recipe that actually delivers. Typically puddings have eggs, heavy cream or other animal products. However, you can easily make a vegan option with just using cornstarch. The trick is to know how to work with cornstarch, and limit how much you put in. If you’re familiar with the texture it gives off once put in a recipe, the more you add, the more you can taste it.Â
Needless to say, it’s all about balance and this recipe works!
One of my favorite flavors outside the traditional ones, is mango! You can use fresh mango or a mango puree, the choice is yours. It’s creamy, sweet, with notes of lime, and is the perfect effortless summer dessert!

VEGAN 4 INGREDIENT MANGO PUDDING
- Total Time: 15 mins
- Yield: 2 - 4 Servings 1x
Ingredients
- 1 cup mango puree
- 1 cup coconut milk (full fat)
- 3 tbsp cornstarch
- 2 tbsp stevia or sugar free sweetener of choice
- juice from 1 lime
- zest from 1 lime
- Garnish: coconut whip
Instructions
- Puree mango in a blender until smooth
- Combine cornstarch and lime juice, set aside
- Add the pureed mango, sweetener, lime zest and coconut milk to a pan. Heat until bubbling
- Now slowly drizzle in the cornstarch mixture and continue to stir. The mixture should thicken within 2 minutes. Once it sticks to the spatula remove from heat and place in a bowl. Once cooled, place in the fridge to firm up. Garnish w/coconut whip.
