Vegan Folded Quesadilla with Homemade Nacho Cheese

Instructions

  1. Lay tortilla flat. Fold in half to create a seam in the tortilla marking the middle. Unfold, and make a small cut to the center of the tortilla.
  2. Imagine the tortilla is split into 4 equal sections. Add a couple spoonfuls of each ingredient into each section. I love to do avocado, black beans, homemade nacho cheese, and pickled veggies.
  3. Starting with the bottom left quadrant, fold the tortilla up and over the top left, then the top right, then the bottom right.
  4. Add 1 tbsp olive oil to the pan. Add quesadillas and cook for 3 minutes per side.
  5. Remove from heat and garnish with fresh cilantro. Serve immediately and enjoy!
