Waffle:
- 1 cup almond flour
- 4 tbsp corn starch
- 1 tsp baking powder
- 1 tbsp ground flax + 2.5 tbsp water
- 1/2 cup plant milk
- 1 banana
- 1 tsp vanilla extract
- 1/4 tsp sea salt
Blueberry Sauce:
- 1 1/2 cups fresh blueberries
- 1/2 cup water
- 3 tsp corn starch combine with 1/4 cup water
- 3 tbsp maple syrup
Instructions
- Blueberry Sauce: Place the blueberries, maple syrup, and water in the pan over medium heat. Cook for 5-7 minutes until berries burst and the sauce thickens.
- Combine corn starch and water, whisk until smooth.
- Combine with the cooked berries, and cook for 2-3 minutes more. Remove from heat and allow to cool.
- Combine the ground flax and water in a bowl, whisk together and set aside to thicken.
- Toss the banana in the blender with the plant milk, flax egg, and extract. Blend until smooth.
- Now add the almond flour, corn starch, baking powder, and sea salt to the blender and blend again.
- Heat a waffle maker and add a touch of coconut oil to prevent sticking.
- Fill the cavities and cook. Repeat until all batter has been used. Serve with blueberry sauce.
