Waffle:

Blueberry Sauce: 

  • 1 1/2 cups fresh blueberries
  • 1/2 cup water
  • 3 tsp corn starch combine with 1/4 cup water
  • 3 tbsp maple syrup 

Instructions

  1. Blueberry Sauce: Place the blueberries, maple syrup, and water in the pan over medium heat. Cook for 5-7 minutes until berries burst and the sauce thickens. 
  2. Combine corn starch and water, whisk until smooth.
  3. Combine with the cooked berries, and cook for 2-3 minutes more. Remove from heat and allow to cool. 
  4. Combine the ground flax and water in a bowl, whisk together and set aside to thicken.
  5. Toss the banana in the blender with the plant milk, flax egg, and extract. Blend until smooth. 
  6. Now add the almond flour, corn starch, baking powder, and sea salt to the blender and blend again. 
  7. Heat a waffle maker and add a touch of coconut oil to prevent sticking.
  8. Fill the cavities and cook. Repeat until all batter has been used. Serve with blueberry sauce.
