Ingredients

Scale
  • 1 packed cup basil leaves
  • 2 tablespoons coarsely chopped chives
  • 1/3 cup packed tablespoons parsley leaves
  • 1 handful fresh spinach
  • 3 garlic cloves, peeled
  • 1 small shallot, chopped
  • 1/3 cup fresh tarragon
  • 1 fresh lemon juice, plus more to taste
  • 1/4 cup apple cider vinegar
  • 1/3 cup extra-virgin olive oil, plus more for drizzling
  • 1/4 cup soaked cashews 
  • Fine sea salt + black pepper as needed

Salad: 

  • 1/3 cup+ thinly sliced fennel
  • 1 cup baby arugula
  • 1/2 head white cabbage, thinly sliced
  • 1 avocado, chopped
  • Fresh cracked black pepper 
  • 2 chopped scallions

 


Instructions

  1. Soak cashews in boiling water for 10 minutes
  2. Place all the dressing ingredients in a high power blender. Blend until smooth.
  3. Pair with the salad ingredients and serve
