Ingredients

Base: 

1  2/3 cups oat milk

1/4 cup pumpkin puree

2 teaspoons white sugar

1 teaspoon pumpkin spice

1/2 teaspoon vanilla extract

1/4 cup boiling water

1/4 cup instant coffee granules

1/4 cup white sugar

1/4 teaspoon pumpkin spice


Instructions

  1. Stir oat milk, pumpkin, sugar, and pumpkin pie spice together in a saucepan over medium-high heat. Cook, stirring, until sugar dissolves and mixture just comes to a simmer. Remove from heat, add the vanilla extract, cover to keep warm.
  2. Stir boiling water, instant coffee, sugar, and pumpkin pie spice for whipped coffee together in a bowl. Beat with an electric mixer on high until fluffy and stiff peaks form, about 2 minutes.
  3. Divide warm oat milk base between 2 large mugs. Top with whipped coffee.
