Salad:
- 1 cup red cabbage, thinly sliced
- 3 cups white cabbage, thinly sliced
- 4 scallions, chopped
- 1/3 cup chopped cilantro
- 1 tbsp sesame seeds
- 1 avocado, cubed
- 1/2 cup shredded carrots
- 1/2 cup toasted cashews, chopped
- 4–6 mint leaves
Dressing
- 1 tbsp soy sauce
- 2 tbsp honey or agave
- 1 1/2 tbsp rice vinegar
- 2 tbsp lime juice
- 1 tsp sesame oil
- 1/2 tsp red pepper flakes
- 3 tbsp peanut butter
Instructions
- Wash and prep all your ingredients. Throw them all in the bowl minus the cashews and avocado. This prevents them from just sinking to the bottom/getting smashed.
- Once combined throw on additional chopped cilantro and sesame seeds, add the cashews and chopped avocado and place in the fridge while you make the dressing.
- In a container combine all of the salad dressing ingredients. Modify the ingredients as desired to achieve desired flavor and consistency. Enjoy!
Notes
- You could also add fresh ginger or garlic to the dressing if desired, but not even needed!
