Vegan Thai Cabbage Salad with Peanut Dressing

 

 

 

 

Let’s talk salads! 

 

When it comes to summer, I’m craving a salad nearly every day. It’s light, refreshing, doesn’t weigh me down, and they can be as veggie packed as you like. Needless to say, there are endless variations when it comes to salads. One of my personal favorites that’s good for any season, is a good cabbage salad!

I’m so fixated on cabbage salads for countless reasons, that I can’t even remember the last time I bought mixed greens. (true story) Cabbage packs more fiber making it more filling and my favorite part, it will outlive any salad green hands down and that includes spinach. You just can’t beat it. Bonus, it’s also more cost effective versus any other salad green.

When thinking of my favorite salads, the Thai Salad always comes to mind. Everyone likes to put their own spin on it and it’s typically paired with steak and a heavy dressing. I knew we could take the same flavor components, but make a version that’s filling even without the protein and not compromise anywhere. Just like that, my staple Thai Cabbage Salad was born.

This salad is one for the books as it brings all the flavor profiles full circle. It’s so flavor forward, you don’t have to even feature a protein. It’s truly a win win all around and bonus, it’s absolutely gorgeous! Just as much as I love all the salad ingredients, the dressing is what also puts it over the top. It’s your typically pad thai dressing, but with a lighter consistency and more citrus forward. It’s the perfect addition to this salad.

 


 

What’s great about this salad? 100 percent, everything. It’s quick, easy, filling, affordable, flavorful, has multiple textures, it’s savory with the nuts, sweet with the dressing, it’s not loaded with sugar, has hints of mint, the salad will hold up for hours since it’s cabbage based (without dressing), It’s vibrant, veggie packed, has note of citrus and a hint of heat, you can pack on more veggies, it’s great for entertaining and bottom line, it’s a must try!

Vegan Thai Cabbage Salad with Peanut Dressing

Ingredients

Units Scale

 

Salad:

  • 1 cup red cabbage, thinly sliced
  • 3 cups white cabbage, thinly sliced
  • 4 scallions, chopped
  • 1/3 cup chopped cilantro
  • 1 tbsp sesame seeds
  • 1 avocado, cubed
  • 1/2 cup shredded carrots
  • 1/2 cup toasted cashews, chopped
  • 46 mint leaves

Dressing 


Instructions

  1. Wash and prep all your ingredients. Throw them all in the bowl minus the cashews and avocado. This prevents them from just sinking to the bottom/getting smashed.
  2. Once combined throw on additional chopped cilantro and sesame seeds, add the cashews and chopped avocado and place in the fridge while you make the dressing.
  3. In a container combine all of the salad dressing ingredients. Modify the ingredients as desired to achieve desired flavor and consistency. Enjoy!

Notes

  • You could also add fresh ginger or garlic to the dressing if desired, but not even needed!
