In hopes to bring you more effortless lunch concepts I’ve been obsessing over chickpea sales lately. We’ve all gone thru a hummus phase, but there is so much more you can do with chickpeas, one of them is salads! Yesterday we featured a Caesar Chickpea Salad and today I wanted to explore a Green Goddess. I’m forever in love with tarragon and the flavor it provides, which is why I’m all about Green Goddess anything. 

 

Being that GG dressing is a crowd pleaser, I knew we could also do a seamless chickpea salad that offers the same flavor, but packs protein and fiber.. and the vegan Green Goddess Chickpea Salad was born!

 

What’s great about my approach to the Green Goddess dressing is that I pack on the greens! My recipe features arugula and avocado, no oil, no mayo, and is just so good! I love this concept as it’s quick, easy, affordable, perfect for any season, can easily be made in bulk, light and refreshing, but filling, perfect for entertaining and is one of my go to’s!

Vegan Super Green Goddess Chickpea Salad

Ingredients

Scale
  • 2 cans chickpeas, drained, rinsed
  • Juice from one lemon
  • 2 tbsp capers
  • 1 tsp garlic powder
  • 1 shallot, minced
  • 1 avocado
  • 1 handful arugula
  • 1/4 cup tarragon
  • Salt + Pepper as needed

Instructions

  1. Place everything but the chickpeas in a food processor.
  2. Blend until smooth, scraping down the sides every few seconds. If you’re having issues getting everything to blend you can more lemon juice or water.
  3. Place drained and rinsed chickpeas in a large bowl.
  4. Pour the mixture over them and mash with a potato masher, fork or your hands. Leave 1/4 of the chickpeas whole with the others mashed.
  5. Chill in the fridge if not consuming immediately. Serve on a bun or by itself!
