Vegan Watermelon Cucumber Salad

Ingredients

  • 1/3 cup extra-virgin olive oil
  • 1/2 lime, juice
  • 2 cups seedless watermelon, cut into cubes
  • 1/2 red onion, cut into thin slices
  • 810 coarsely chopped mint leaves
  • 810 coarsely chopped basil leaves
  • 2 tbs balsamic glaze (optional)
  • 1/2 cup arugula
  • Salt/Pepper as needed

Instructions

  1. In a large bowl, combine all of the salad ingredients minus the balsamic glaze(optional) and olive oil. Toss and coat. Store in fridge until ready to serve. To plate drizzle the olive oil and balsamic glaze over the top.
