Salad:
- 4 cups arugula
- 1 avocado, sliced,
- 1/2 cara cara orange
- 1/2 blood orange
- 1/2 cup feta or vegan feta
- 1/3 cup toasted pistachios, chopped
- 5–10 mint leaves
Dressing:
- 2 tbsps champagne vinegar
- 1 tbsp dijon mustard
- 1 shallot, finely chopped
- 2 tsps honey or agave
- 2 tbsps olive oil
- 1 tbsp chopped tarragon
- Salt + pepper as needed
Instructions
- Combine all the salad ingredients.
- In a shallow bowl combine all the salad dressing ingredients.
- Pour over salad, enjoy!
