If there is one thing I crave when the spring weather hits, it’s a good salad! While I can simply throw a bunch of veggies together and call it a day. It’s so easy to take a few extra steps and create something that’s truly memorable that will be your go to til the end of time. 

 

One of my personal favorites, is this Citrus Salad

 

Everyone has a different take on this concept, but I love to pair my oranges with some arugula, fennel, and toasted pistachios! The combination of all these components makes for the best salad!What’s great about this salad is that you can mix up the ingredients and tailor it to your preferences. 

 

I love this take on the citrus salad as each ingredient serves a purpose. It’s sweet from the oranges, savory from the nuts, tart from the feat cheese, and the mint just ties it all in together. The dressing is also a great selling point for this dish. It’s herbaceous with a hint of sweet, and could work well with just about any salad!

 

 

 

 

 


 

What’s great about this salad? Everything. It’s quick, easy, packed with flavor, has a variety of textures, you can leave out some ingredients and still have a winning salad, it can easily be made in bulk (just don’t dress it and keep oranges on the side until ready to serve), it’s vibrant, filling, could be paired with a protein, pairs well with the dressing, and is perfect for spring!

CITRUS SALAD WITH TOASTED PISTACHIOS AND MINT

Ingredients

Units Scale

 

Salad: 

  • 4 cups arugula
  • 1 avocado, sliced,
  • 1/2 cara cara orange
  • 1/2 blood orange
  • 1/2 cup feta or vegan feta
  • 1/3 cup toasted pistachios, chopped
  • 510 mint leaves

 

 

Dressing: 

  • 2 tbsps champagne vinegar
  • 1 tbsp dijon mustard
  • 1 shallot, finely chopped
  • 2 tsps honey or agave
  • 2 tbsps olive oil
  • 1 tbsp chopped tarragon
  • Salt + pepper as needed

 


Instructions

  1. Combine all the salad ingredients.
  2. In a shallow bowl combine all the salad dressing ingredients.
  3. Pour over salad, enjoy!
