Single Bake Vegan Levain Style Chocolate Chip Walnut Cookies

I’ve tried and baked a myriad of vegan cookies and while I love the majority, nothing compares to this Levain style cookie. Some of you may be asking, what the heck is Levain cookie and why do I care? Let me tell you!

Levain Bakery is a widely loved NYC bakeshop that features all the baked staples. It’s so good you’ll see it on tv left and right and everyone raves about this shop. Something I always factor in is that to survive in NYC, no matter what you’re selling, people have to love it. The rent is so high, there is so much competition and the list goes on. This bakery, sells.

So how did this one chocolate chip cookie captivate an entire country? I’ll tell you..  

Everyone loves a classic chocolate chip cookie, but this approach is just next level. It features cake flour, which adds a lightness, lots of butter (needed), more brown sugar than white for more of a softer cookie texture, and the one strategy I love most is that they make the height of the cookie sky high. By adding height the inside cooks slower making it more of a doughy center. Last but not least, the temperature is key as its higher than traditional cookies at 410 degrees, giving you a crisp outer edge and just a slightly soft center.

The combination of all these variables truly delivers a fab cookie that will make you say, wow, I’m never going back to traditional cookies!

It’s modeled after the most sought after recipe, features just flax eggs, can all be made in 1 bowl, you don’t have to sift in the dry ingredients, uses vegan butter and stevia sweetened chocolate chips, mirrors the real deal, compromises nowhere with texture or flavor, requires no chill time (thank goodness), its faster than my full recipes, it’s portioned, you can mix up the fillings, it’s crispy on the outside and soft on the inside, and just hands down, my all time favorite cookie. Tips & Tricks

  • Don’t pack your flour
  • I recommend baking under 15 mins as the longer you bake the more cake like they can become.
  • Don’t add too much baking powder
  • Don’t skimp on butter!
  • You can add in other nuts or skip them altogether.
  • I highly recommend topping with flake salt!

Instructions

  1. Combine the flax egg and water, set aside.
  2. Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Set aside.
  3. Beat the butter and sugar until combined and smooth.
  4. Add 1 1/2 tbsps of the flax egg mixture and vanilla extract to the bowl, combine.
  5. To a bowl combine all the dried ingredients. Gradually add it to the bowl mixing on low. The texture will be crumbly, but don’t worry.
  6. Add your chocolate chips and walnuts and combine with your hands. Add additional chips on top.
  7. Gently press down, but don’t flatten. You want the cookie to have height. Bake for 13-15 mins until golden brown.
  8. Allow the cookie to rest for about 10 minutes, then enjoy!

    Thanks for so many amazing recipes. I’ve seen the different versions of the Levain Style cookies but haven’t tried any yet – until this one! I notice in the write up before the recipe that the cookies are baked at a higher temperature than traditional cookies at 410F, but in the recipe it calls for the oven to be set to 350F. Should the oven be 410F? Thanks!

      Yes! The full recipe that makes the full quantity is cooked at a higher temperature. I modified the temperature since this is a single serving. Traditional baking temperature is 350, so again, it’s still higher to get that perfect exterior!

  3. I’ve made this recipe four times now, and each time it came out perfect. I even tried a version with no chocolate or walnuts, just plain cookie, and it also turned out great!
