Ingredients

  • 1/4 cup Cilantro
  • 1 Bag Grilled Corn, frozen
  • 2 Limes, Juice
  • 1 Scallion, chopped
  • 1 tbsp Vegan mayo
  • 1 tbsp Vegan sour cream
  • 1/4 tsp Chili powder
  • 1/2 tsp Paprika
  • 3/4 tsp Salt
  • 1 tbsp Olive oil
  • 1/2 tsp Cumin
  • 1/2 cup Cojita cheese or vegan feta

Instructions

  • Allow your frozen grilled corn to thaw out.
  • Throw everything in a bowl, garnish with limes and additional chopped cilantro and Cojita cheese. Adjust the seasonings as desired.
