Instructions

  1. Preheat oven to 350 degrees. Line an 8 inch baking pan with parchment paper, set aside.
  2. In the bowl of a food processor combine all of the ingredients (minus the chocolate chips) and blend until smooth.
  3. Scrape down the sides of the bowl and blend a few times to ensure that everything is blended well. 
  4. Layer into the lined baking pan and spread into an even layer.
  5. Top with dark chocolate chips. Bake for 20-25 minutes until a toothpick is inserted and comes out clean. I recommend making a aluminum foil tent midway to prevent the chocolate chips from drying out. 
  6. Remove from heat. Allow to cool for 5-7 minutes. Slice and enjoy! Store in an airtight container for 1 week.
