- 10 cups popcorn
- 1 tsp flake salt plus more
- 1/2 cup clear corn syrup
- 1 cup brown sugar
- 7 tbsp vegan butter
- 1 tsp vanilla extract
- 3 tsp cinnamon powder
- 2 tsp ginger powder
- 1/2 tsp allspice powder
- 1/4 tsp ground cloves
- 1/2 tsp baking soda
Instructions
- Preheat oven to 230 degrees.
- Prepare 2 baking sheets with parchment paper.
- Melt butter in a mediums size skillet. Once melted add the brown sugar and white corn syrup and salt. Mix until just combined.
- Allow to simmer for 4 minutes undisturbed. Remove from heat and add the spices and vanilla. Combine quickly (3 seconds) Now add the baking soda. Mix well for 10 seconds. Then pour over the popcorn. Mix and coat.
- Spread out on 2 pans. Bake for 45 mins, tossing and costing every so often.
- Remove from heat and allow to cook. Break into pieces and enjoy! Garnish with additional salt if desired.
