Instructions

  1. Preheat oven to 230 degrees.
  2. Prepare 2 baking sheets with parchment paper.
  3. Melt butter in a mediums size skillet. Once melted add the brown sugar and white corn syrup and salt. Mix until just combined.
  4. Allow to simmer for 4 minutes undisturbed. Remove from heat and add the baking soda and optional vanilla. Mix well for 10 seconds. Then pour over the popcorn. Mix and coat.
  5. Spread out on 2 pans. Bake for 45 mins, tossing and costing every so often.
  6. Remove from heat and allow to cook. Break into pieces and enjoy! Garnish with additional salt if desired.
