Vegan Salted Caramel Corn
Let’s talk caramel corn!
During the holidays as a child we would always get tubs of popcorn that came in the different flavors. Today you can still find those, but I promise.. it’s so easy to make it yourself! From a distance you would think making caramel corn would be messy and involved, but it’s so seamless and you can easily mix up the flavors.
Bonus, caramel corn is just a handful of ingredients thrown together and you can have fresh caramel corn within 45 mins!
For our first caramel corn recipe we decided to keep it classic, but you can easily throw in nuts or spices to tailor it to your preferences or the season! The only thing that you have to keep in mind with making homemade caramel corn, is the timing! It’s the easiest recipe, but you have to time things correctly and ensure you follow the steps correctly. If you don’t, you may end up with burnt caramel, grainy caramel and so on.
If you follow the instructions though, you’ll have the best vegan caramel corn!

Vegan Salted Caramel Corn
- Total Time: 20 mins
- Yield: Serves 6 - 8 1x
Ingredients
- 10 cups popcorn
- 1 tsp flake salt plus more
- 1/2 cup clear corn syrup
- 1 cup brown sugar
- 7 tbsp vegan butter
- 1 tsp vanilla extract
- 1/2 tsp baking soda
Instructions
- Preheat oven to 230 degrees.
- Prepare 2 baking sheets with parchment paper.
- Melt butter in a mediums size skillet. Once melted add the brown sugar and white corn syrup and salt. Mix until just combined.
- Allow to simmer for 4 minutes undisturbed. Remove from heat and add the baking soda and optional vanilla. Mix well for 10 seconds. Then pour over the popcorn. Mix and coat.
- Spread out on 2 pans. Bake for 45 mins, tossing and costing every so often.
- Remove from heat and allow to cook. Break into pieces and enjoy! Garnish with additional salt if desired.
