Vegan Santa Fe Salad

  • 1 head romaine lettuce, chopped
  • 1 cup black beans, rinsed, drained
  • 1 cup grilled corn (Whole Foods brand)
  • 1/2 cup red onion, thinly sliced
  • 1 cup cherry tomatoes, sliced
  • 1 avocado, cubed
  • 1/4 cup chopped cilantro



  1. Dressing: Soak the cashews overnight or 10 minutes in boiling hot water. Throw all the dressing ingredients together in a blender, and blend until smooth. Set aside.
  2. Salad: Whats and prep all the ingredients
  3. To serve: Throw everything in a bowl and top with dressing!
