Vegan Thai Cabbage Salad

Ingredients

Salad:

  • 4 cups thinly sliced cabbage 
  • 1 jalapeno, seeds remove, thinly sliced
  • 1 cup thinly sliced white cabbage 
  • 10 mint leaves
  • 10 sprigs cilantro, chopped 
  • 2/3 cup chopped mango
  • 1/2 avocado, chopped
  • 1/2 lime, juice 
  • 1 carrot, peeled 

Dressing: 

  • 1/2 avocado 
  • 1/2 cup vegan sour cream or yogurt
  • 10 sprigs cilantro 
  • 1/2 lime, juice 
  • 2 handfuls spinach 
  • 1 tsp garlic 
  • Salt/Pepper as needed 
  • 1/2 Jalapeno (optional)
  • 1/3 cup pickled jalapeños 
  • 1 tbsp olive oil 

Instructions

  1. Wash and prep all the ingredients. I like to toss and coat everything in the lime juice to combine the flavors and preserve the ingredients. 
  2. Throw all the salad ingredients in a food processor. Blend until smooth. 
  3. Toss the salad in a few tbsp of dressing. A little goes a long way so you’ll have leftovers to use! 

Notes

Other add ons you could do are thinly sliced red onion!
