Scale
Salad:
- 4 cups thinly sliced cabbage
- 1 jalapeno, seeds remove, thinly sliced
- 1 cup thinly sliced white cabbage
- 10 mint leaves
- 10 sprigs cilantro, chopped
- 2/3 cup chopped mango
- 1/2 avocado, chopped
- 1/2 lime, juice
- 1 carrot, peeled
Dressing:
- 1/2 avocado
- 1/2 cup vegan sour cream or yogurt
- 10 sprigs cilantro
- 1/2 lime, juice
- 2 handfuls spinach
- 1 tsp garlic
- Salt/Pepper as needed
- 1/2 Jalapeno (optional)
- 1/3 cup pickled jalapeños
- 1 tbsp olive oil
Instructions
- Wash and prep all the ingredients. I like to toss and coat everything in the lime juice to combine the flavors and preserve the ingredients.
- Throw all the salad ingredients in a food processor. Blend until smooth.
- Toss the salad in a few tbsp of dressing. A little goes a long way so you’ll have leftovers to use!

Other add ons you could do are thinly sliced red onion!
