I’ve been enamored with Levain Style cookies, but came across one that actually had a story behind it. That, and it was also about Neiman Marcus lol. Just those two reasons had me curious about this cookie and what all the hype was about. 

Supposedly everybody has heard the story about a woman lunching at the Neiman Marcus Cafe in Dallas, who enjoyed the chocolate chip cookies so much that she asked for the recipe. For “only two-fifty,” the waitress said, it was hers. But when the credit card bill arrived, the woman found the total near $300. Turns out the recipe cost $250, the story goes. In 1997, after years of enduring the myth, Neiman Marcus came up with a recipe – and gave it out for free. It’s a delicious variation on chocolate chip cookies, using ground oatmeal, nuts and adding extra chocolate with a grated Hershey bar (you can use any brand you love).

 

What’s so fab about this cookie? Everything. 

 

Just like the Levain Style having something that just draws you in, so do these! These cookies are packed with oats making them a lil more dense, but more filling and packing on fiber which I love. My most favorite part about these cookies though? It features chocolate that you break down with a micro plane. 

 

Sounds interesting right?  It is!

 

Every bite into a cookie and get no chocolate chips? Sad story right lol. With this method you derive more chocolate flavor into your cookies. If like me you like to be as conservative as you can with added sugar, you can use a stevia sweetened chocolate bar along with chips. Want to service even more flavor? You could mix it up by using a flavored chocolate bar!

 

 

 

 


 

So what’s great about these cookies? The nostalgia, the simplicity, requires no chill time or sifting of ingredients, all you need is a flax egg to bind it together, it features oats, contains 1/2 cup less sugar than the traditional version, the versatility with the flavored chocolate bars you can use and also mixing up the nuts, it’s filling, like an elevated traditional cookie, and perfect for any season!

Instructions

 

  1. Heat oven to 375 degrees.
  2. Cream together vegan butter and both sugars.
  3. Stir in vegan flax eggs and vanilla.
  4. Finely grind oatmeal in a high power blender or food processor.
  5. Combine the oatmeal, flour, salt, baking powder and soda in a medium bowl, and slowly add it to the wet ingredients. Beat just until combined.
  6. Grate chocolate bar using a microplane grater and add it, along with chocolate chips and nuts to the batter. Mix just to combine. (if you make overnight, simply store in airtight container in fridge. Let dough come to room temp, about 10 mins before shaping. Color may look darker with micro planed chocolate)
  7. Drop by heaping tablespoonfuls, 2 inches apart, on a greased cookie sheet. Bake for 8-10 minutes.

Notes

  • If dough seems dry, work 1 capful of almond milk into the batter with your hands.
  • Prep Time: 10 mins
