Vegan Lemon Blueberry Loaf

 

 

 

 

 

 

 

If you know me, you know I’m all about the lemon concepts. With pregnancy, I’m even more about it! Did you know that you can actually carry a gene that makes you more likely to enjoy bitter flavors?!

 

 

As you guessed it,  I  have it!!

 

When I think of spring, I think of endless fruit concepts with fresh citrus. While you can get really fancy, you can easily throw together a stress free loaf and call it a day. Rather than sticking to a traditional recipe I wanted to mix it up. Rather than using bananas or almond milk, this recipe instead calls for vegan yogurt and applesauce and the results were buttery soft!!

 


 

 

What’s fab about this loaf, is everything! It’s quick and easy, packs tons of fresh blueberries, a rich lemon flavor, you can skip the frosting for less added sugar, it’s buttery soft, perf for spring, you can switch up the fruit if you like, and you just can’t go wrong!

    1. Hello, You could use banana, but it may take on a banana like flavor profile. Let me know how it turns out!

  2. I usually fail making boxed baled goods from the grocery store, and i was able to make this easily! It was delicious!
