When it comes to an effortless dessert, cobblers are it!  This type of dessert is open to interpretation meaning that some loved a more biscuit like topping where there’s prefer more of a cake like texture. No matter which route you go, it’s all a win win and bonus.. it’s so easy!

Being from the south I’m familiar with cobblers at they are served at just about every restaurant. The one flavor you’ll always see that’s iconic for Georgia, is a classic Peach Cobbler! When thinking of flavors, I knew, we had to capture this flavor. Summer is peach season! So in addition to them being packed with more flavor, the price point is great! Bonus, with this recipe, you don’t even need to peel the peaches!

 

 


 

What’s great about this recipe? Holy moly, everything. It’s quick, easy, affordable, vegan, can be made gluten free, packs 1/2 the sugar as most recipes, can be made with less fruit than others, has notes of cinnamon, it’s buttery soft and also super crispy, you can switch up the fruit, can easily be made in advance then thrown in the oven, can be made in bulk, perfect for entertaining, mirrors the classic cobbler, and is just perfect for any season!

Vegan Peach Cobbler

Ingredients

Filling: 

  • 3 peaches , cored and sliced (about 3 cups)
  • 1/3 cup granulated sugar
  • 1/4 teaspoon salt

For the batter:

  


Instructions

  1. Add the sliced peaches, sugar and salt to a saucepan and stir to combine. (if using canned/jarred peaches, skip this step)
  2. Cook on medium heat for just a few minutes, until the sugar is dissolved and helps to bring out juices from the peaches. Remove from heat and set aside.
  3. Preheat oven to 350 degrees F. Slice butter into pieces and add to a 6×13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.
  4. In a large bowl mix together the flour, sugar, baking powder, and salt. Stir in the milk, just until combined. Pour the mixture into the pan, over the melted butter and smooth it into an even layer.
  5. Spoon the peaches and juice (or canned peaches, if using) over the batter. Sprinkle cinnamon generously over the top.
  6. Bake at 350 degrees for about 38-40 minutes. Serve warm, with a scoop of ice cream, if desired.
