Vegan Strawberry Rice Krispy Treats

Today I was thinking of recipes I had not done in a long time, and Rice Krispy Treats came to mind! Whether we had them a lot or rarely, there is something about them that is just nostalgic today. It’s an antiquated concept, but ironically still holds up today!
My only thing with recreating this staple treat, is that I have to have fun with it. There are so many flavors to explore and variations you can do, so I decided to whip up vegan Strawberry Rice Krispy Treats!
At this time ingredients are hard to come by, but the cereal should be available, marshmallows too, and if you can get your hands on some freeze dried strawberries you’re golden! lol
What’s great about this recipe, is just, everything! It’s my staple rice krispy treat, features less cereal for a more soft texture, vegan marshmallows, you can switch up the cereal if you like, packs tons of freeze dried strawberries, these are perfect for spring, you could incorporate white chocolate if desired, they have aesthetic appeal, and are just so fun!

Vegan Strawberries + Cream Rice Krispy Treats
- Total Time: 20 minutes
- Yield: 4-8 squares 1x
Ingredients
- 4 1/2 cups Rice Cereal
- 1 bag Vegan Marshmallows
- 3 tbsp Vegan Butter
- 1.2 oz Freeze Dried Strawberries
Instructions
- Place freeze dried strawberries in a food processor and pulse 10x. You want some strawberries to remain and to create a powder too.
- In a large pot over medium heat add the vegan butter.
- Once melted add the marshmallows and continue to stir the mixture until fully melted and combined. Make sure to not have the heat up too high as this will create hard treats.
- Once melted add the strawberries and combine.
- Once fully combined add in the cereal a little at a time and combine again. Typically treats request 6 cups of cereal, but I like to do less as they’ll remain softer and less dense.
- Remove from heat and spread the mixture in the pan with another sheet of parchment paper to create an even layer. The mixture will be hot.
- Once you have the thickness you desire, make the slices. Serve immediately and store away so they don’t dry out and harden.

Where can I store them so they don’t dry out?
Also will they be fine if I cover them with plastic wrap?
Plastic wrap should work!
I followed the directions exactly and covered when done serving. Since they aren’t warm anymore, they are hard as a rock? Where did I go wrong? Thanks
Hi Chloe, I find That can happen when too much cereal is added, so the ratio is a lil off. While this is the typical amount for each, I like to add a lil less cereal so they replicate more of a softer classic rice krispy treat. I’ve read also that high heat can make them hard. Try melting the marshmallows over low heat.You may be able to throw them in the microwave to soften them, but I’ve yet to try that.
