Avocado Pesto Pasta
Whether I like to admit it, I was never a huge pasta person as I always viewed it as just empty calories and it typically left me feeling bloated. Today though, I have a great appreciation for all things pasta as it’s actually the best medium to pack on the veggies. This recipe is living proof of that!Â
Fun Fact: This dish was actually one of the first recipes I created back in 2014! There was no recipes for it online, but now it’s everywhere! It very well may in fact be the first avocado pasta dish there ever was lol.Â
What’s amazing about pesto sauce is that you can easily throw in some green to get a nutrient boost without compromising the flavor. Avocado not only adds color and nutrients, but it also provides a more whipped like texture. The spinach offers even more nutrients and a gorgeous hue you just can’t deny.
What do I love about this dish? Everything! It’s quick, easy, includes accessible ingredients, is affordable, nutrient dense, can be packed with even more veggies, has texture, it’s colorful, can be made in bulk, perfect for any season, great for entertaining, and non vegan approved!

Avocado Pesto Pasta
- Total Time: 15 minutes
- Yield: 4 Servings 1x
Ingredients
Other:
- 1 box cooked Angel Hair Pasta
Sauce
- 1 ripe avocado
- 1 cup chopped spinach
- 1/2 cup vegan parmesan cheese (optional)
- 1/2 cup pine nuts
- 7–10 basil leaves
- 1 lemon, juiced
- 1/2 tsp red pepper flakes
- 4 cloves garlic
- 3 tbs olive oil
- salt + pepper as needed
Instructions
- Throw everything in a food processor. Pulse until smooth and add additional lemon juice or olive oil to achieve the desired consistency.
- Let your pasta cool a little bit, then toss the Avocado Pesto in angel hair pasta. Garnish with chopped basil. Store sauce in fridge if making in advance.
