When it comes to potatoes, I’m all about variety. There is something about each one that is great for various concepts or entree pairings, but if I had to say so, I love a good sweet potato! They naturally pack more flavor, fiber, a hint of sweet making them a great option for baked goods, pair well with heat, and just like white potatoes, the options are endless as to what you can do with them.  

 

While you can easily roast some sweet potatoes and call it a day, you can just as easily pack on some flavor and make a memorable dish that you’ll want to keep around for a lifetime, aka.. these new Chipotle Honey Lime Sweet Potatoes!

 

I had explored something similar roughly 5 years ago, but wasn’t that impressed by the final result. Fast forward to today, I wanted to revisit this staple dish, but put an EDS spin on it. If there is one thing you’ll notice about my recipes, I love adobo sauce! I’ve used the sauce/peppers in countless dishes since I discovered it back in 2013ish. If you’re not familiar with them, I can guarantee you’ve seen them at the store, but may just not have realized how amazing they really are. 

 

 

What”s adobo sauce?

 

 

Chipotle chiles are dried, smoked jalapeños. Adobo is a tangy, slightly sweet red sauce. Put them together in a can and they become a versatile pantry staple. Use just the chipotles for intense smoky chile heat or just the sauce for a sour-sweet flavor and a slightly less fiery smoky heat.Adobo sauce/peppers seamlessly add a hint of heat and smokiness to any dish that just doesn’t compare to spices. Bonus, a lil truly goes a long way, they are so cheap, easy to find, and 1 can will last a while!

 

 

 

 

 


 

What’s great about this dish? Honestly, everything! It’s quick, easy, affordable, perfect for any season, can easily be made in bulk, packs tons of flavor, has a hint of heat, a hint of sweet, a smokiness to it, crispy, you can use this to fill tacos with, you can make these vegan by subbing the honey, great for entertaining, and hands down, my favorite potato dish!

Chipotle Honey Lime Sweet Potatoes

Ingredients

Scale
  • 4 sweet potatoes, cubed
  • 1 1/2 tbsp olive oil
  • 1/2 tsp kosher salt

Sauce: 


Instructions

  1. Preheat oven to 425 degrees. Rinse and cube sweet potatoes. Place on a 2 baking sheets and drizzle with olive oil. Toss and coat. Spread out evenly and sprinkle with kosher salt. Make sure they are spread out enough, if not they will just steam and not get crispy.
  2. Bake for 20-25 minutes tossing the potatoes mid bake and rotating the pan.
  3. In a small dish whisk and combine all the sauce ingredients.
  4. Remove from heat and toss and coat in the sauce. Garnish with additional cilantro and lime zest!
