I know what you’re thinking, a bowl full of veggies, I just can’t get into it. Before you pass on this fab dish I promise you, whether you’re a veggie enthusiast or the furthest thing from it.. You’re going to love this recipe! So just how good is this recipe?! Out of ver 500 concepts on EDS this is still one of my personal favorites for a myriad of reasons. Side note, that’s being said even though I’m not even a black eyed pea person lol.
I tried this Texas Caviar back in circa 2009 at a local spot with my now husband. Although aesthetically all I could think was this is just a bunch of beans, I was instantly hooked. I’ve enjoyed this now popular concept for many years and I can see why it’s gained such a huge following on social media. It’s because its just that good!
Like many iconic concepts, everyone has their own take on it. Since I’m forever enamored with the one we would get in the NYC, I modeled this recipe after that version. It’s slightly sweet, a lil sour, and packs a lil heat. Bonus, it’s veggie packed, filling, affordable, and perfect for entertaining. While you can mix up the ingredients, people also like to mix up the dressing. I love this seamless dressing with minimal ingredients, packing notes of vinegar, lime, a hint of sweet, and notes of cumin. Many pass on the cumin in this dish, but I’m telling you, it makes a huge difference!
What’s great about this recipe? Honestly, everything! Its quick, easy, affordable, great for entertaining, bright, colorful, flavorful, you could top with a protein if desired, pair with avocado (my preference) it could easily be made in bulk, it’s veggie packed, the dressing is simple yet perfection, and is just such an iconic combo!

Description
Quick and easy Texas Caviar!
Ingredients
- 1/2 can black beans, drained and rinsed
- 1/2 can corn, drained
- 1 cup red onion, diced
- 3 roma tomatoes, seeds removed, chopped
- 1/4 cup cilantro, chopped
- 1/2 cup pickled jalapeños, chopped (or 1/2 jalapeño pepper, chopped)
- 1 can black eyed peas, drained, rinsed
- 1 small red bell pepper
- 1 small green bell pepper
Dressing:
- 1 lime, juice
- 1 tsp coarse salt
- 1 tbsp olive oil
- 1/2 cup apple cider vinegar
- 1 tbsp honey or agave
- 1/2 tsp cumin
Instructions
- Mix together all of the salad ingredients.
- In a shallow bowl combine the dressing. Pour over the ingredients and chill in the fridge until ready to serve. The longer it sits the better flavor you achieve. Serve with tortilla chips! All of the ingredients can be modified to fit your personal preference!
