The temperatures are rising, so I’m instantly craving lighter and brighter foods. Believe it or not, I wasn’t familiar with what a Crudite was until about 2017. A vegetable platter, sure, but I had never heard that term thrown around and I just loved it. If you’ve never heard of them until now, don’t stress! They prove that if you have a fab dip, you can really pack on the veggies!

 

What’s also great about this concept is that you can branch out and feature everything from olives to fresh bread, nuts, cheese if desired, and more. The options are endless and these types of plates leave me feeling full, but not weighed down. 

 

Back around the same time of exploring crudités I finally tried green goddess dressing and I was hooked. If I had to say, its perhaps the tarragon. You typically only see it with meats or chicken salad, but there is something unique about the flavor profile that just draws you in. 

 

 

 

 


 

What’s great about my recipe, is that it’s ultra green! Not only is it quick, easy, dairy free, has the perfect texture, features avocado, spinach, tons of herbs! Have leftover dip? You can also use it as a salad dressing or sandwich spread!

Vegan Green Goddess Dip

Ingredients

Scale
  • 1 avocado
  • 3/4 vegan sour cream or yogurt
  • 2 cloves garlic, minced
  • 1/3 cup olive  oil
  • 2 tbsp champagne vinegar (or lemon juice)
  • 1/2 cup chopped parsley
  • 1/4 cup chopped tarragon
  • 3 Tbsp chopped chives
  • 1/4 cup basil
  • 2 handfuls fresh spinach
  • salt/pepper as desired

Instructions

  1. Throw all of the ingredients in a food processor. Blend until smooth. Garnish with chives and serve with your favorite veggies. Want to add another dimension of flavor? Throw in 1 jalapeño, seeds remove, and blend!
