Salads get a bad reputation for being boring and bland, but just like everything.. it depends how it’s prepared. If you go to a restaraunt and order a salad, chances are there is a little bit of effort that went into it to create all the different components. If we apply the same effort to our own salads, it’s typically a win. 

 

I personally, love cabbage salads!

Why are cabbage salads my go to? 

 

Cabbage takes forever to spoil, it goes well with any dressing, any add ons, you can make it super thin, it packs more fiber which makes it more filling. Most greens you have to pick thru the bad leaves. With cabbage, you never have to do that. Maybe you’ll slice off a bad end, but it’s fresh underneath. If you’re searching for the most cost effective salad base that’s super filling, go with cabbage!

 

Let’s talk about this salad!

 

If there is one thing I love, it’s anything cabbage, and anything with a little heat. With Cinco de Mayo around the corner, I was craving a salad that would be perfect to celebrate, go great with any protein, or even use as a taco topping.. and just like that, the Jalapeno Cabbage Salad was born!

 

 

 

 

 


 

What’s great about this salad? Everything. It’s quick, easy, affordable, packs tons of flavor, fiber, it’s filling, vibrant, sweet, tangy, with a hint of heat, can easily be used on top of tacos and burgers, refreshing, and the honey lime vinaigrette just puts it over the top! Bonus, you can use this dressing for countless other dishes, because it’s just that good!

Jalapeño Cabbage Salad with Honey Lime Vinaigrette

Ingredients

Units Scale

Salad: 

  • 4 cups white cabbage, thinly sliced
  • 1 cup dinosaur kale, thinly sliced
  • 2 jalapeños, seeds removed, thinly sliced
  • 1 avocado, cubed
  • 2 scallions, chopped
  • 1 bunch of cilantro, stems removed, finely chopped
  • 1/2 cup feta cheese, you can also do vegan feta

 

Honey Lime Vinaigrette: 

  • 2 tbsps olive oil
  • 2 tbsp rice vinegar
  • 2 tsps sesame oil
  • 1 1/2 tbsps honey or agave
  • 1 tbsp grey poupon
  • 2 tsps lime juice
  • Pinch of salt
  • Fresh cracked black pepper
  • 1 tbsp fresh chopped cilantro
  • 1 scallion, thinly sliced

Instructions

 

  1. Wash and prep all our salad ingredients, and combine in a large bowl. For the kale, thinly slice and massage with a drizzle of olive oil for a few minutes to loosen the fibers.
  2. In a small bowl combine all the dressing ingredients, pour over salad.
