Vegan 1 Bowl Salted Chocolate Chip Cookie Bars

 

 

 

Let’s talk cookies!

 

Everyone loves a classic chocolate chip cookie, but I also love a classic cookie bar! Bonus, I find that the texture can be better with bars and they even stay fresher longer. Since we’ve done a slew of cookie concepts over the past year, I knew we had to revisit cookie bars again and add more to the list.

While I love to go for innovative flavors, I knew we had to bring it back to the basics and feature a staple Salted Chocolate Cookie Bar!

Since cookies are typically made using a standing mixer, I wanted to gravitate away from that and offer and option that could be made in one bowl. A mixer is great for whipping butter, but it can also be a pain to clean and the less dishes the better!

 

 


 

What’s fab about these cookie bars? Everything! It’s modeled after our Levain cookie recipe, doesn’t even need flax eggs, can all be made in 1 bowl, uses vegan butter and stevia sweetened chocolate chips, is packed with chocolate chips, has notes of salt, compromises nowhere with texture or flavor, are sweet, salty, perfect for any season, requires no chill time (thank goodness), crispy on the outside and slightly soft on the inside, and just hands down such a win in the cookie department!

Instructions

  1. Preheat the oven to 350˚F. Grease a 9″×13″ pan and set aside.
  2. Add the flour, baking soda, salt, and cornstarch to medium mixing bowl and whisk until combined. Make sure you’re measuring your flour right and scooping from the bag.
  3. To your baking dish add the softened vegan butter, sugars, almond milk, and vanilla Beat until combined.
  4. Sift the dry ingredients into the wet and mix until just combined.
  5. Fold in 1 cup chocolate chips
  6. Press the cookie dough evenly into the pan and top with 1/3-1/2 cup additional chips (optional)
  7. Bake in the preheated oven for 16-18 minutes, until a toothpick comes out clean. If you choose to bake in a smaller pan to create larger bars, bake for 25-30 mins.
  8. Garnish with flake salt while still hot. Allow to fully cool then slice into bars.

Notes

  • If you don’t have a sifter or are struggling to combine the butter and sugar or just don’t have the energy lol, just make the recipe in the bowl of a standing mixer.
  • Prep Time: 10 mins
  • Cook Time: 16 mins
