I’m currently on an avocado kick! While I eat them just about every day, I’ve been searching for ways to incorporate them into anything and everything for a boost of color, nutrients, and texture. If the balance is done right its really the perfect addition to countless recipes. 

 

With summer nearly wrapping up within the next month I realized I had not done a popsicle concept the entire summer! (gasps) While there are over 500 recipes on EDS, some can be less ideal when you’re seeking a quick concept and you have moments to spare. That being said, I’ve been on a mission to offer recipes that are just so easy.. 

 

and these vegan Avocado Key Lime Pie pops are it!

 

 

 

 

 


 

I love everything about this recipe. It’s a handful of ingredients, nutrient packed, has minimal added sugar, a whipped texture, aesthetic appeal, you can even throw in spinach, perf for any season, you can’t taste avocado, and are perf if you have avocados on the verge of going bad! (the flavor is so good, you could literally skip the freezing and eat it fresh!)

Avocado Key Lime Pie Pops

Ingredients

Scale
  • 2 ripe avocados
  • 1 can coconut milk (save 1/4 cup to place on the ends, optional)
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • 1/4 cup lime juice
  • zest from 1 lime
  • 1 handful spinach (optional)

Instructions

  1. Throw everything in a food processor and blend until smooth. Throw into popsicle molds leaving 1/2 inch not filled. Top off with remaining coconut milk
  • Prep Time: 5 minutes
